Ingredients

  • 500 grams Raw mangoes
  • 1 tablespoon Salt
  • 1 teaspoon Turmeric powder
  • 2 teaspoons Red chili powder
  • 1 teaspoon Fenugreek seeds
  • 1 teaspoon Fennel seeds
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Hing (asafoetida)
  • 50 milliliters Mustard oil

Directions

Step 1

Wash the raw mangoes thoroughly and pat them dry with a clean kitchen towel.

Step 2

Cut the mangoes into small cubes, leaving the skin on for added fiber and flavor.

Step 3

In a large mixing bowl, combine the mango cubes with salt and turmeric powder. Mix well, ensuring all pieces are coated. Set aside for 1 hour to allow the mangoes to release some moisture.

Step 4

In a dry skillet over medium heat, toast fenugreek seeds, fennel seeds, mustard seeds, and cumin seeds until fragrant. Allow them to cool, then grind them into a coarse powder.

Step 5

Once the mangoes have rested, add the ground spice mix, hing, and red chili powder to the bowl. Mix thoroughly to coat all mango pieces.

Step 6

Heat mustard oil in a small pan until it is hot but not smoking. Pour the hot oil over the mango mixture, and stir well to combine. The hot oil will help to preserve the pickle.

Step 7

Transfer the pickle to a clean, dry jar, pressing down gently to remove any air pockets.

Step 8

Seal the jar tightly and store it in a cool, dry place for at least 3-4 days to allow the flavors to mature, shaking the jar daily to ensure even distribution of spices.

Step 9

Enjoy this heart-healthy mango pickle as a tangy side dish or condiment with your favorite meals.
