  • 500 grams Baby potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cumin powder
  • 0.25 teaspoon Red chili powder
  • 1 medium Tomato, chopped
  • 2 small Green chilies, finely chopped
  • 1 teaspoon Ginger, grated
  • 1 medium Bell pepper, chopped
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh cilantro, chopped
  • 0.5 teaspoon Salt

Directions

Step 1

Wash and boil the baby potatoes in a pot of water until they are just tender, about 10 minutes. Drain and allow them to cool slightly before peeling or leave unpeeled for additional fiber.

Step 2

Heat olive oil in a non-stick pan over medium heat. Add cumin seeds and let them sizzle for a few seconds until aromatic.

Add the grated ginger and green chilies to the pan, sauté for a minute until fragrant.

Add the chopped tomato and cook for about 3 minutes until it softens and starts breaking down.
