Ingredients

  • 1.5 cups Whole wheat flour
  • 1 teaspoon Baking powder

  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 2 large Eggs
  • 0.5 cup Unsweetened applesauce
  • 0.5 cup Honey or maple syrup
  • 0.5 cup Plain Greek yogurt
  • 1 teaspoon Vanilla extract
  • 1 cup Shredded zucchini
  • 1 cup Shredded carrot
  • 0.5 cup Chopped walnuts (optional)
  • 0.25 cup Raisins (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.

In a separate medium-sized bowl, beat the eggs. Add in the unsweetened applesauce, honey or maple syrup, plain Greek yogurt, and vanilla extract. Mix until well combined.
