Ingredients

  • 1 cup Plain Greek yogurt
  • 1 cup Unsweetened almond milk
  • 1 packet Unflavored gelatin
  • 3 tablespoons Honey or maple syrup
  • 1 teaspoon Vanilla extract
  • 1 cup Mixed fresh berries (e.g., strawberries, blueberries, raspberries)
  • 4 sprigs Mint leaves (optional, for garnish)

Directions

Step 1

1. In a small saucepan, pour in the almond milk and sprinkle the gelatin evenly over the surface. Let it sit for 1-2 minutes to bloom and soften.

Step 2

2. Place the saucepan over low heat and gently warm the mixture, stirring constantly, until the gelatin is fully dissolved. Avoid boiling. This should take about 2-3 minutes.

Step 3

3. Remove the saucepan from the heat and stir in the honey (or maple syrup) and vanilla extract until combined.

Step 4

4. In a medium mixing bowl, whisk the Greek yogurt to loosen it, then gradually add the warm gelatin mixture, stirring constantly to create a smooth consistency.

Step 5

5. Divide the mixed berries into the bottom of 4 serving flutes or small glasses, reserving a few for garnish if desired.

Step 6

6. Slowly pour the yogurt-gelatin mixture over the berries in each flute, filling them evenly.

Step 7

7. Chill the flutes in the refrigerator for at least 2 hours, or until the yogurt gelatin is fully set.

Step 8

8. Before serving, garnish each flute with additional berries and a sprig of fresh mint if desired.
