Ingredients

  • 2 cups Whole wheat flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon

  • 0.5 teaspoon Ground cloves
  • 0.25 teaspoon Salt
  • 0.5 cup Coconut oil (melted, slightly cooled)
  • 0.5 cup Unsulphured molasses
  • 0.5 cup Coconut sugar or brown sugar
  • 1 unit Large egg
  • 1 teaspoon Vanilla extract
  • 0.25 cup Optional: Turbinado sugar (for rolling)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium mixing bowl, whisk together the whole wheat flour, baking soda, cinnamon, ginger, cloves, and salt. Set aside.

In a large mixing bowl, combine the melted coconut oil, molasses, and coconut sugar. Stir until smooth and well combined.

Add the egg and vanilla extract to the wet mixture, and whisk until fully incorporated.
