  • 2 cans (5 ounces each) canned tuna in water
  • 0.25 cups plain Greek yogurt

  • 1 tablespoon lemon juice
  • 0.25 cups celery, finely diced
  • 0.25 cups red onion, finely diced
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 4 slices whole-grain bread slices
  • 0.5 cups sharp cheddar cheese, shredded
  • 1 cups baby spinach leaves

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.

Step 2

Drain the canned tuna thoroughly and add it to a mixing bowl. Break apart any large chunks with a fork.
