Ingredients

  • 1 cup Rolled oats
  • 0.75 cup Whole wheat flour
  • 0.5 cup Coconut sugar
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon

  • 0.25 cup Unsweetened applesauce
  • 0.25 cup Melted coconut oil
  • 2 cups Cooked sweet potato puree
  • 0.5 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 2 Eggs
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Ground cloves
  • 1 Non-stick spray or parchment paper

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper or lightly grease it with non-stick spray.

Step 2

In a large bowl, combine the rolled oats, whole wheat flour, coconut sugar, baking powder, ground cinnamon, and salt.

Step 3

Stir in the unsweetened applesauce and melted coconut oil until the mixture is well-combined and crumbly. Set aside 1/2 cup of this mixture for topping.
