Rinse the black grapes and Italian plums thoroughly under cold water. Pat dry with a paper towel.
Cut each Italian plum in half lengthwise and remove the pit. Slice each half into quarters to create small triangular pieces for the penguins’ flippers and feet.
Melt the dark chocolate in a heatproof bowl using a double boiler or in the microwave in 30-second increments, stirring each time until smooth.
Take a grape and dip one side lightly into the melted dark chocolate to create the penguin’s 'back'. Hold the grape carefully until the chocolate sets slightly. Repeat with all the grapes and set aside to fully cool on a parchment-lined tray.
Using a small, sharp knife, create a small slit in the front of each grape. Pipe or carefully spoon a tiny amount of low-fat cream cheese into the slit to form the penguin’s 'belly'.
Attach two plum slices at the base of each grape using a dab of cream cheese to create the penguin’s 'feet'. Use two additional slices on either side of the grape to resemble the penguin’s 'flippers'.
Secure everything together by gently inserting a toothpick through the center of the grape and into the plum pieces at the bottom. Be careful not to squish the grape.
Repeat the process for all the grapes to create 20 healthy sweet penguins.
Arrange the penguins on a serving platter and serve immediately, or refrigerate for up to 2 hours before serving.
