Ingredients

  • 1 cup Raw cashews
  • 1 cup Unsweetened almond milk
  • 0.25 cup Nutritional yeast
  • 3 Garlic cloves
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 4 cups Fresh spinach
  • 1 can Canned artichoke hearts
  • 1 tablespoon Olive oil
  • 1 Onion (finely chopped)
  • 0.25 teaspoon Red pepper flakes (optional)

Directions

Step 1

Soak the raw cashews in hot water for 10-15 minutes or boil them for 5 minutes until softened. Drain and set aside.

Step 2

Add the soaked cashews, almond milk, nutritional yeast, garlic cloves, lemon juice, salt, and black pepper into a blender or food processor. Blend until smooth and creamy, scraping down the sides as needed.

Step 3

Rinse the fresh spinach and roughly chop it. Drain and chop the canned artichoke hearts into small pieces.

Step 4

Heat the olive oil in a medium-sized skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.

Step 5

Add the spinach to the skillet and cook for another 3-4 minutes, stirring often, until wilted.

Step 6

Stir in the chopped artichoke hearts and cook for another 2 minutes.

Step 7

Reduce the heat to low. Pour the blended cashew cream over the spinach and artichoke mixture in the skillet, stirring to combine evenly.

Step 8

Optional: Add a pinch of red pepper flakes for extra flavor.

Cook for an additional 2-3 minutes, stirring gently, until the mixture is heated through.
