Ingredients

  • 1 medium (around 2 pounds) butternut squash
  • 2 tablespoons olive oil

  • 1 large, peeled and diced carrot
  • 4 cups vegetable broth
  • 0.5 cup (use unsweetened) coconut milk
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons (optional, for garnish) chopped fresh parsley
  • 2 tablespoons (optional, for garnish) pumpkin seeds

Directions

Step 1

Preheat your oven to 400°F (200°C). Cut the butternut squash in half lengthwise and scoop out the seeds. Drizzle 1 tablespoon of olive oil over the flesh of the squash, then place it cut side down on a baking sheet lined with parchment paper. Roast for 25-30 minutes, or until the flesh is tender and easily pierced with a fork.

While the squash is roasting, heat the remaining 1 tablespoon of olive oil in a large pot over medium heat. Add the diced onion and cook, stirring occasionally, for about 3-4 minutes, or until softened.
