Ingredients

  • 1 cup rolled oats
  • 1 scoop protein powder (vanilla or chocolate flavor)
  • 1 cup natural peanut butter (or almond butter)
  • 0.25 cup honey (or maple syrup for vegan version)
  • 0.25 cup dark chocolate chips (optional)
  • 1 tablespoon chia seeds (optional)
  • 0.5 teaspoon vanilla extract (optional for extra flavor)

Directions

Step 1

In a large mixing bowl, combine the rolled oats and protein powder. Stir until evenly mixed.

Step 2

Add the peanut butter and honey to the dry ingredients. Mix well until a dough-like consistency forms. If the mixture feels too dry, add a teaspoon of water or milk at a time until it comes together.

Step 3

If using dark chocolate chips, chia seeds, or vanilla extract, fold them into the mixture to incorporate.

Step 4

Scoop about a tablespoon of the mixture and roll it into a ball using your hands. Place the ball onto a parchment-lined tray. Repeat with the remaining mixture.

Step 5

Once all the balls are shaped, gently flatten them with the back of a spoon or your palm to form cookie shapes.

Step 6

Place the cookies in the refrigerator for at least 30 minutes to firm up.

Step 7

Once set, enjoy immediately or store in an airtight container in the fridge for up to one week.
