Ingredients

  • 2 cups Whole wheat flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground ginger
  • 0.5 teaspoon Ground cloves
  • 0.25 teaspoon Salt
  • 0.5 cup Coconut oil (melted)
  • 0.5 cup Unsulphured molasses
  • 0.5 cup Coconut sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.25 cup Turbinado sugar (optional, for rolling)

Directions

Step 1

Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the whole wheat flour, baking soda, ground cinnamon, ground ginger, ground cloves, and salt. Set aside.

Step 3

In a large mixing bowl, combine the melted coconut oil, unsulphured molasses, and coconut sugar. Mix well until smooth.

Step 4

Add the egg and vanilla extract to the wet ingredients. Beat until fully incorporated.

Step 5

Gradually add the dry ingredients to the wet ingredients. Stir until the cookie dough forms and no streaks of flour remain.

Step 6

If desired, place the turbinado sugar in a small bowl. Scoop out 1-tablespoon portions of dough, roll them into balls, and, if using, roll each ball in the turbinado sugar to coat.

Step 7

Place the cookie dough balls on the prepared baking sheets, spacing them about 2 inches apart.

Bake in the preheated oven for 8–10 minutes, or until the cookies are set but still soft in the center.

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
