Ingredients

  • 1.5 cups Whole wheat flour

  • 2 large Eggs
  • 3 tablespoons Fresh lemon juice
  • 1 tablespoon Lemon zest
  • 1 teaspoon Vanilla extract
  • 0.25 cup Coconut oil, melted and cooled slightly

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease it lightly with oil.
