Ingredients

  • 1 pound Catfish fillets
  • 2 tablespoons Olive oil
  • 1 cup Whole wheat breadcrumbs
  • 2 tablespoons Parmesan cheese
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Dried parsley
  • 0.5 teaspoon Dried thyme
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 large Eggs
  • 0 NA Cooking spray

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly coat it with cooking spray.

Step 2

Cut the catfish fillets into bite-sized nuggets, approximately 1-2 inches in size.

Step 3

In a shallow bowl, whisk together the eggs and 1 tablespoon of olive oil until well combined.

Step 4

In another shallow bowl, mix the breadcrumbs, Parmesan cheese, paprika, garlic powder, onion powder, dried parsley, dried thyme, salt, and black pepper.

Step 5

Dip each catfish nugget into the egg mixture, ensuring it is fully coated. Allow any excess egg mixture to drip off.

Step 6

Then coat the nugget in the breadcrumb mixture, pressing gently to adhere the breadcrumbs to the fish.

Step 7

Place the coated catfish nuggets onto the prepared baking sheet in a single layer, leaving a bit of space between each piece.

Step 8

Drizzle the remaining tablespoon of olive oil over the tops of the nuggets to help them crisp up during baking.

Step 9

Bake in the preheated oven for 12-15 minutes, flipping the nuggets halfway through to ensure even cooking. They should be golden brown and cooked through (the fish should easily flake with a fork).

Step 10

Remove the nuggets from the oven and let them cool for a couple of minutes before serving. Pair with your favorite dipping sauce or a fresh side salad for a complete meal.
