Ingredients

  • 1 pound Ground turkey

  • 3 cloves Garlic, minced
  • 2 tablespoons Chili powder
  • 2 teaspoons Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Low-sodium chicken broth
  • 1 can Diced tomatoes (14.5 oz can)
  • 2 tablespoons Tomato paste
  • 1 can Low-sodium black beans, rinsed and drained
  • 1 can Low-sodium kidney beans, rinsed and drained
  • 1 cup Corn kernels (fresh, frozen, or canned)
  • 0.25 cup Fresh cilantro, chopped (optional, for garnish)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat and add the olive oil.

Step 2

Once the oil is hot, add the diced onions and bell peppers. Sauté for about 4-5 minutes until softened.

Add the minced garlic and cook for another minute, stirring frequently, until fragrant.
