Ingredients

  • 1 cup (loosely packed) Fresh cilantro
  • 0.25 cup Extra virgin olive oil
  • 3 tablespoons Fresh lime juice
  • 1 clove (small, minced) Garlic
  • 1 teaspoon Honey (or maple syrup for vegan option)
  • 1 teaspoon White vinegar
  • 0.25 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 2 tablespoons Water (optional, for thinning)

Directions

Step 1

Wash and pat dry the cilantro. Roughly chop the leaves to make it easier to blend.

Step 2

In a blender or food processor, combine the chopped cilantro, olive oil, lime juice, minced garlic, honey (or maple syrup), white vinegar, cumin, salt, and black pepper.

Step 3

Blend the ingredients on high until the mixture becomes smooth and emulsified. If the dressing is too thick or you prefer a thinner consistency, add water one tablespoon at a time and blend until the desired consistency is reached.

Step 4

Taste the dressing and adjust seasoning by adding more salt, lime juice, or honey if needed.

Step 5

Transfer the dressing to a jar or bottle with a lid. Shake well before each use as natural separation may occur over time.

Step 6

Store in an airtight container in the refrigerator for up to 5 days. Enjoy it over salads, as a dip, or as a marinade for roasted vegetables or proteins!
