Ingredients

  • 2 cups Almond flour
  • 0.25 cup Coconut flour
  • 0.33 cup Maple syrup
  • 0.25 cup Coconut oil (melted)
  • 1 tablespoon Ground flaxseed
  • 2 tablespoons Water
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Baking powder
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 0.25 cup Dairy-free chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a small bowl, combine the ground flaxseed and water. Stir well and set aside for 5 minutes to create a flax egg.

Step 3

In a large mixing bowl, whisk together almond flour, coconut flour, baking powder, cinnamon, and salt until well combined.

Step 4

Add the melted coconut oil, maple syrup, vanilla extract, and the prepared flax egg to the flour mixture. Stir until the dough comes together. If the dough is too sticky, let it rest for a couple of minutes to allow the coconut flour to absorb the moisture.

If using, fold in the dairy-free chocolate chips.

Scoop tablespoon-sized portions of the dough, roll them into balls, and place them on the prepared baking sheet. Gently flatten each cookie with the back of a spoon or your palm to your desired thickness.
