Ingredients

  • 1 piece Whole grain pita bread
  • 1 large Egg
  • 2 tablespoons Low-fat shredded mozzarella cheese
  • 4 pieces Cherry tomatoes
  • 1 cup Spinach leaves
  • 1 teaspoon Olive oil
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 0.25 teaspoon Dried oregano
  • 0.25 teaspoon Red chili flakes (optional)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Place the whole grain pita bread on a baking sheet lined with parchment paper.

Step 3

Heat a small non-stick skillet over medium heat and add olive oil. Crack the egg into the skillet and cook it sunny-side up for about 2-3 minutes or until the whites are set but the yolk is still runny. Remove from heat and set aside.
