Ingredients

  • 0.5 cup Sweet corn, cooked or canned (rinsed and drained)
  • 1 medium Avocado, diced
  • 2 tbsp Olive oil
  • 2 tbsp Lime juice, freshly squeezed
  • 0.5 tsp Ground cumin
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

In a large mixing bowl, combine the black beans, cherry tomatoes, red bell pepper, cucumber, red onion, cilantro, and sweet corn.
