  • 3 cups Fresh corn kernels (from about 3 ears)
  • 1 cup Cherry tomatoes, halved
  • 1 Cucumber, diced
  • 0.25 cup Red onion, finely chopped
  • 0.25 cup Fresh basil leaves, chopped
  • 0.25 cup Feta cheese, crumbled (optional)
  • 2 tbsp Red wine vinegar
  • 2 tbsp Olive oil (for salad)
  • 0.25 tsp Salt (for salad)
  • 0.25 tsp Black pepper (for salad)

Directions

Step 1

In a small bowl, whisk together 3 tablespoons of olive oil, soy sauce, honey, minced garlic, lime juice, ground cumin, 0.5 teaspoon of salt, and 0.5 teaspoon of black pepper to create the marinade.

Place the pork tenderloin in a large resealable plastic bag or shallow dish and pour the marinade over it. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably up to 4 hours for deeper flavor.
