Ingredients

  • 500 grams Chicken breast, boneless and skinless
  • 2 tablespoons Cornstarch
  • 2 tablespoons Low-sodium soy sauce
  • 2 tablespoons Olive oil
  • 1 large Red bell pepper, diced
  • 1 large Green bell pepper, diced
  • 1 medium Carrot, thinly sliced
  • 1 cup Pineapple chunks, drained (canned or fresh)
  • 2 cloves Garlic, minced
  • 1 teaspoon Fresh ginger, grated
  • 3 tablespoons Honey
  • 2 tablespoons Rice vinegar
  • 2 tablespoons Tomato paste
  • 0.25 cup Water
  • 1 teaspoon Sesame seeds
  • 2 stalks Green onions, chopped

Directions

Step 1

Cut the chicken breast into bite-sized pieces and place them in a mixing bowl.

Step 2

Add 1 tablespoon of cornstarch and 1 tablespoon of soy sauce to the bowl. Mix to coat the chicken evenly and set aside for 10 minutes to marinate.

Step 3

Heat 1 tablespoon of olive oil in a large non-stick skillet or wok over medium-high heat.

Add the chicken to the skillet in a single layer and cook for 5-6 minutes until golden brown and fully cooked. Remove the chicken and set aside.
