Ingredients

  • 2 pounds Yukon Gold potatoes
  • 1 whole bulb Garlic
  • 1 teaspoon Olive oil
  • 1 cup Plain Greek yogurt
  • 0.5 cup Unsweetened almond milk (or low-fat milk)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Peel off the outer layers of the garlic bulb, leaving the individual cloves intact. Slice the top off the bulb to expose the tops of the cloves.
