  • 2 large Eggs
  • 0.5 cups Unsweetened applesauce
  • 0.33 cups Honey
  • 1 teaspoon Vanilla extract
  • 0.5 cups Milk (dairy or non-dairy)
  • 1 cup Fresh or frozen blueberries
  • 0.5 cups Chopped strawberries or diced apple
  • 0.25 cups Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with muffin liners or lightly grease it with oil spray.

Step 2

In a large mixing bowl, whisk together the whole wheat flour, rolled oats, baking powder, ground cinnamon, and salt.

Step 3

In a separate bowl, beat the eggs, then mix in the applesauce, honey, vanilla extract, and milk until well combined.
