Ingredients

  • 3 large Ripe bananas
  • 1 large Egg
  • 0.25 cup Honey
  • 1 teaspoon Vanilla extract
  • 0.25 cup Plain Greek yogurt
  • 0.25 cup Coconut oil (melted)
  • 1.5 cups Whole wheat flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Salt
  • 0.5 cup Dark chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a standard 12-cup muffin tin with liners or lightly grease it with non-stick spray.

Step 2

In a large mixing bowl, mash the bananas until smooth using a fork or potato masher.

Step 3

Add the egg, honey, vanilla extract, Greek yogurt, and melted coconut oil to the mashed bananas. Whisk until well combined.

In a separate bowl, whisk together the whole wheat flour, baking soda, cinnamon, and salt.

Gradually add the dry ingredients to the wet ingredients. Gently fold the mixture with a spatula until just combined. Be careful not to overmix.
