Ingredients

  • 500 grams Ground chicken (lean)
  • 0.25 cup Onion (finely minced)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Fresh parsley (chopped)
  • 1 Egg white
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 400 grams Tomatoes (diced, fresh or canned)
  • 0.25 cup Basil leaves (fresh, chopped)
  • 0.5 cup Chicken broth (low sodium, HCG compliant)
  • 1 teaspoon Apple cider vinegar

Directions

Step 1

In a mixing bowl, combine ground chicken, minced onion, garlic, fresh parsley, egg white, salt, and black pepper. Mix well to create a uniform mixture.

Step 2

Using damp hands, form the mixture into small meatballs, about 1 inch in diameter. Set aside on a plate.

Step 3

In a large non-stick skillet, heat a splash of chicken broth over medium heat (instead of oil, per HCG protocol). Add the meatballs in batches, browning them on all sides until slightly golden. Remove and set aside.

Step 4

In the same skillet, add the diced tomatoes, remaining chicken broth, apple cider vinegar, and chopped basil. Stir well and bring the mixture to a simmer.

Step 5

Return the meatballs to the skillet, gently submerging them into the tomato basil sauce. Cover and let simmer on low heat for 15-20 minutes, stirring occasionally to avoid sticking.

Step 6

Taste the sauce and adjust seasoning with more salt and pepper, if needed.

Step 7

Serve the meatballs hot with the sauce spooned over them. Pair with a side of steamed vegetables or a fresh salad for a complete HCG-compliant meal.
