Ingredients

  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.75 cups unsalted butter, softened
  • 4 large eggs
  • 0.5 cups whole milk
  • 0.25 cups freshly squeezed lemon juice
  • 2 tablespoons lemon zest
  • 2 teaspoons baking powder
  • 0.5 teaspoons salt
  • 1 cup powdered sugar
  • 2 tablespoons freshly squeezed lemon juice (for glaze)
  • 1 teaspoon lemon zest (for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a bundt pan or 9-inch round cake pan.

Step 2

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition.

Step 5

Mix in the lemon zest and freshly squeezed lemon juice until well incorporated.

Step 6

Alternately add the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients. Mix just until combined; do not overmix.

Step 7

Pour the batter into the prepared pan, spreading it evenly with a spatula.

Step 8

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Allow the cake to cool in the pan for 10 minutes, then carefully turn it out onto a wire rack to cool completely.

Step 10

To make the glaze, whisk together the powdered sugar and 2 tablespoons of lemon juice until smooth. If the glaze is too thick, add more lemon juice a teaspoon at a time until you reach the desired consistency.

Step 11

Once the cake is fully cooled, drizzle the lemon glaze evenly over the top. Garnish with the reserved lemon zest for a pop of color and extra zing.

Step 12

Slice and serve the cake. Enjoy with a cup of tea or coffee!
