Ingredients

  • 2 pounds ground beef (80/20 blend preferred)
  • 0.5 pounds ground pork
  • 1 medium onion, finely diced
  • 3 cloves garlic cloves, minced
  • 1 cup breadcrumbs
  • 0.5 cup milk
  • 2 pieces large eggs, beaten
  • 2 tablespoons Worcestershire sauce
  • 0.5 cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried parsley
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 2 tablespoons brown sugar
  • 0.5 cup ketchup (for topping glaze)
  • 1 teaspoon apple cider vinegar

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

Step 2

In a large mixing bowl, combine the ground beef and ground pork. Mix lightly to combine, but avoid overworking the meat.

Step 3

Add the diced onion, minced garlic, breadcrumbs, milk, beaten eggs, Worcestershire sauce, 1/2 cup of ketchup, Dijon mustard, dried parsley, salt, black pepper, and paprika to the meat mixture.

Step 4

Using your hands or a large spoon, gently combine all the ingredients until evenly distributed. Be careful not to overmix, as this can make the meatloaf dense.

Step 5

Shape the meat mixture into a loaf shape and place it on the prepared baking sheet, or press it evenly into a loaf pan.

Step 6

In a small bowl, whisk together 1/2 cup of ketchup, brown sugar, and apple cider vinegar to create the glaze.

Step 7

Spread half of the glaze evenly over the top of the meatloaf with a spoon or brush.

Step 8

Bake in the preheated oven for 45 minutes. Remove from the oven and spread the remaining glaze on top.

Step 9

Return the meatloaf to the oven and bake for an additional 25 minutes, or until the internal temperature reaches 160°F (71°C).

Step 10

Let the meatloaf rest for 10 minutes before slicing. Serve warm and enjoy!
