  • 200 g granulated sugar
  • 50 g brown sugar

  • 250 g all-purpose flour

  • 0.5 tsp salt
  • 150 g crushed pineapple (drained)
  • 80 g shredded coconut
  • 60 g chopped macadamia nuts

Directions

Step 1

Preheat your oven to 175°C (350°F) and grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, mash the ripe bananas until smooth using a fork or a potato masher.

Step 3

Add the granulated sugar, brown sugar, melted unsalted butter, eggs, and vanilla extract to the mashed bananas. Whisk until well combined and smooth.

In a separate bowl, sift together the all-purpose flour, baking soda, and salt.
