Ingredients

  • 8 slices Brioche or Hawaiian sweet bread
  • 8 ounces Cream cheese
  • 1 cup Pineapple (crushed, canned)
  • 1 cup Sweetened shredded coconut
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Vanilla extract
  • 4 Eggs
  • 0.5 cup Whole milk
  • 0.5 teaspoon Ground cinnamon
  • 2 tablespoons Butter
  • 0 Maple syrup (optional, for serving)
  • 0 Powdered sugar (optional, for garnish)

Directions

Step 1

In a medium bowl, combine the cream cheese, crushed pineapple, shredded coconut, granulated sugar, and vanilla extract. Mix until smooth and well combined. Set aside.

Step 2

Lay out 4 slices of the bread on a clean surface. Spread an even layer of the cream cheese mixture onto each slice, leaving a small border around the edges.

Step 3

Top each slice with another slice of bread to create a 'sandwich'. Press down gently to seal the edges.

Step 4

In a shallow dish, whisk together the eggs, milk, and ground cinnamon to create the custard mixture.

Step 5

Dip each stuffed sandwich into the custard mixture, making sure to coat both sides evenly. Let the bread soak for about 5-10 seconds per side.

Step 6

Melt 1 tablespoon of butter in a large nonstick skillet or griddle over medium heat. Cook 2 stuffed sandwiches at a time for 3-4 minutes per side, or until golden brown and cooked through. Repeat with the remaining butter and sandwiches.

Step 7

Serve the Hawaiian Stuffed French Toast warm. Optionally, drizzle with maple syrup and sprinkle with powdered sugar for garnish.
