Ingredients

  • 14 oz extra-firm tofu
  • 2 tbsp cornstarch
  • 3 tbsp soy sauce
  • 1 cup pineapple juice
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tbsp sesame oil
  • 2 scallions, chopped
  • 1 tbsp sesame seeds
  • 2 tbsp vegetable oil

Directions

Step 1

Press the tofu for 15-20 minutes to remove excess moisture. Cut it into 1-inch cubes.

Step 2

In a large bowl, toss the tofu cubes with cornstarch until evenly coated.

Step 3

Heat the vegetable oil in a non-stick skillet over medium heat. Add the tofu and cook for 4-5 minutes on each side, until golden and crispy. Remove and set aside.

Step 4

In a small bowl, whisk together pineapple juice, soy sauce, brown sugar, rice vinegar, ginger, and garlic to make the glaze.

Step 5

In the same skillet, add sesame oil and the prepared glaze mixture. Bring it to a simmer and cook for 5-6 minutes, stirring frequently, until it thickens.

Step 6

Return the tofu to the skillet and toss to coat evenly in the glaze.

Step 7

Garnish with scallions and sesame seeds before serving.

Step 8

Serve immediately, optionally over steamed rice or alongside fresh vegetables for a complete meal.
