Prepare all ingredients by dicing the sausage, slicing the green onions, and mincing the garlic and ginger. If using canned pineapple, drain the juice.
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
Add the diced Hawaiian sausage or Spam to the skillet and cook until browned and slightly crispy, about 3-4 minutes. Remove the sausage from the skillet and set aside.
In the same skillet, add another tablespoon of vegetable oil, followed by the minced garlic and ginger. Sauté for 30 seconds, or until fragrant.
Push the garlic and ginger to one side of the skillet. Pour the beaten eggs onto the empty side and scramble them until just set. Mix the scrambled eggs with the garlic and ginger.
Add the frozen peas and carrots to the skillet. Stir-fry for 2-3 minutes, or until the vegetables are tender but still colorful.
Increase the heat to high and add the cooked and chilled rice to the skillet. Break up any clumps with a spatula and stir-fry until the rice is warmed through, about 3 minutes.
Drizzle the soy sauce and sesame oil over the rice. Sprinkle the salt and pepper. Toss all ingredients together to evenly coat the rice.
Add the browned sausage and pineapple chunks back into the skillet. Stir-fry for another 2 minutes until everything is heated through.
Garnish with sliced green onions and serve hot. Enjoy your Hawaiian Sausage Fried Rice!
