Ingredients

  • 4 cups white rice, cooked and chilled
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup Spam or Hawaiian sausage, diced
  • 1 cup frozen peas and carrots
  • 2 stalks green onions, sliced
  • 2 large eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 0.5 teaspoons salt
  • 0.25 teaspoons ground black pepper

Directions

Step 1

Prepare all ingredients by dicing the sausage, slicing the green onions, and mincing the garlic and ginger. If using canned pineapple, drain the juice.

Step 2

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

Step 3

Add the diced Hawaiian sausage or Spam to the skillet and cook until browned and slightly crispy, about 3-4 minutes. Remove the sausage from the skillet and set aside.

In the same skillet, add another tablespoon of vegetable oil, followed by the minced garlic and ginger. Sauté for 30 seconds, or until fragrant.
