Ingredients

  • 1.5 cups white rice
  • 3 cups water
  • 1 cup pineapple chunks (canned or fresh)
  • 1 cup diced ham
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 2 stalks green onions, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 medium red bell pepper, diced
  • 1 teaspoon toasted sesame seeds (optional for garnish)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the white rice under cold water until the water runs clear, then combine it with 3 cups of water in a medium-sized pot. Bring to a boil, reduce the heat to low, cover, and simmer for 15-18 minutes or until the rice is tender. Remove from heat and let it sit, covered, for 5 minutes.

Step 2

While the rice is cooking, heat the vegetable oil in a large skillet or wok over medium heat.

Step 3

Add the minced garlic and grated ginger to the skillet, cooking for 1 minute until fragrant.

Step 4

Stir in the diced red bell pepper and diced ham, and cook for 3-4 minutes until the ham is lightly browned and the peppers soften.

Step 5

Add the pineapple chunks to the skillet and stir well to combine. Cook for another 2-3 minutes, allowing the pineapple to release its juices and caramelize slightly.

Step 6

Fluff the cooked rice with a fork and add it to the skillet. Mix well to combine all the ingredients.

Step 7

Pour the soy sauce over the rice mixture, season with salt and black pepper, and toss everything together to ensure an even coating.

Step 8

Gently fold in the sliced green onions and cook for an additional 2 minutes to warm everything through.

Step 9

Serve the Hawaiian Rice hot, garnished with toasted sesame seeds if desired.
