Ingredients

  • 4 pieces large eggs
  • 2 tablespoons milk
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon unsalted butter
  • 0.5 cups pineapple chunks (fresh or canned, drained)
  • 0.5 cups ham (diced)
  • 0.25 cups red bell pepper (diced)
  • 2 tablespoons green onions (chopped)
  • 0.5 cups shredded mozzarella cheese

Directions

Step 1

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined and slightly frothy. Set aside.

Step 2

Heat a large nonstick skillet over medium heat and add the butter. Allow it to melt and coat the bottom of the pan.

Step 3

Add the diced ham, red bell pepper, and pineapple chunks to the skillet. Sauté for 2-3 minutes until the ingredients are heated through and the bell pepper softens slightly.

Step 4

Pour the egg mixture over the sautéed ingredients, tilting the pan to ensure the eggs spread evenly over the surface.

Step 5

Sprinkle the chopped green onions and shredded mozzarella cheese evenly over the top of the eggs.

Step 6

Cover the skillet with a lid and cook on medium-low heat for 3-4 minutes until the eggs are fully set and the cheese is melted.

Step 7

Using a spatula, carefully fold the omelette in half or gently slide it onto a plate, folding as you go.

Step 8

Serve immediately with your favorite garnish or side dish, such as toast, avocado slices, or fresh fruit.
