Ingredients

  • 2 pieces Chicken breasts (boneless, skinless)
  • 1 whole Pineapple (fresh, diced or rings for grilling)
  • 5 cups Mixed greens (e.g., spinach, arugula, romaine)
  • 1 cup Cherry tomatoes (halved)
  • 0.25 cup Red onion (thinly sliced)
  • 1 medium Cucumber (sliced)
  • 2 tablespoons Honey
  • 2 tablespoons Lime juice (freshly squeezed)
  • 3 tablespoons Olive oil
  • 3 tablespoons Soy sauce
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ginger (grated)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 stalks Green onions (thinly sliced, for garnish)
  • 1 teaspoon Sesame seeds (toasted, for garnish)

Directions

Step 1

In a small bowl, whisk together soy sauce, 1 tablespoon of honey, 1 tablespoon of lime juice, minced garlic, and grated ginger to create the marinade.

Step 2

Place the chicken breasts in a resealable plastic bag or shallow dish. Pour in the marinade, ensuring the chicken is fully coated. Seal the bag or cover the dish, and marinate in the refrigerator for 1-2 hours.

Step 3

Preheat a grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.

Step 4

Remove the chicken from the marinade and discard the remaining marinade. Grill the chicken for 6-8 minutes per side, or until fully cooked (internal temperature of 165°F or 74°C). Set aside to rest for 5 minutes, then slice into thin strips.

Step 5

While grilling the chicken, place pineapple rings on the grill and cook for 2-3 minutes per side, until grill marks appear and the pineapple is slightly caramelized. Remove from the grill and dice if not already prepped.

Step 6

In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber slices, and red onion. Add the grilled pineapple and sliced chicken on top.

Step 7

In a jar or small bowl, prepare the dressing by whisking together 2 tablespoons of olive oil, 1 tablespoon of honey, 1 tablespoon of lime juice, salt, and black pepper. Drizzle the dressing over the salad and toss to combine.

Step 8

Garnish the salad with green onions and toasted sesame seeds before serving.

Step 9

Serve immediately and enjoy your fresh Hawaiian Grilled Chicken Salad!
