Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups pineapple chunks (fresh or canned in juice, drained)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 red onion
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • 1 tbsp olive oil
  • 0.5 tsp black pepper
  • 0.25 tsp salt
  • 6 wooden skewers (soaked in water for 30 minutes)

Directions

Step 1

Cut the chicken breasts into bite-sized cubes, approximately 1 inch in size.

Step 2

Core and deseed the bell peppers, then cut them into 1-inch pieces. Peel and cut the red onion into similar-sized chunks.

Step 3

In a small bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, grated ginger, olive oil, black pepper, and salt to create the marinade.

Step 4

Place the chicken pieces into a resealable plastic bag or shallow dish, and pour half of the marinade over the chicken. Reserve the other half for basting. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (or up to overnight for more flavor).

Step 5

Preheat your grill or grill pan to medium-high heat. If using an oven, preheat to 425°F (220°C).

Step 6

Thread the marinated chicken, pineapple chunks, bell peppers, and red onion onto the soaked wooden skewers, alternating the ingredients as you go.

Step 7

Place the kebabs on the grill or in the oven. Cook for 12-15 minutes, turning occasionally and basting with the reserved marinade, until the chicken is cooked through and vegetables are slightly charred.

Step 8

Remove the kebabs from the heat and let them rest for a few minutes before serving.

Step 9

Serve immediately and enjoy your Weight Watchers-friendly Hawaiian Chicken Kebabs!
