Ingredients

  • 1 pound carrots
  • 1 cup pineapple chunks (canned, in juice)
  • 1 cup pineapple juice (reserved from canned pineapple)
  • 2 tablespoons brown sugar
  • 2 teaspoons soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons unsalted butter
  • 0.5 teaspoon salt
  • 2 cups water
  • 2 teaspoons chopped fresh parsley (optional, for garnish)

Directions

Step 1

Peel the carrots and slice them diagonally into 1/4-inch thick rounds.

Step 2

In a medium saucepan, bring 2 cups of water to a boil. Add the sliced carrots and cook for 5-7 minutes, or until they are tender but still slightly firm. Drain the carrots and set them aside.

Step 3

In a small bowl, whisk together the pineapple juice, brown sugar, soy sauce, cornstarch, and grated ginger until the mixture is smooth and lump-free.

Step 4

In a large skillet, melt the butter over medium heat. Add the cooked carrots to the skillet and sprinkle them with salt. Stir to coat the carrots in the butter.

Step 5

Pour the pineapple juice mixture into the skillet with the carrots. Stir continuously until the sauce begins to thicken, about 2-3 minutes.

Step 6

Add the pineapple chunks to the skillet and gently stir to combine. Reduce the heat to low and let the carrots and pineapple simmer in the sauce for another 3-4 minutes.

Step 7

Transfer the Hawaiian Carrots to a serving dish and garnish with fresh parsley, if desired. Serve warm and enjoy!
