Ingredients

  • 4.5 cups All-purpose flour
  • 2.25 teaspoons Instant yeast
  • 1 cup Pineapple juice
  • 0.5 cup Whole milk
  • 0.5 cup Unsalted butter
  • 0.33 cup Granulated sugar
  • 2 tablespoons Honey
  • 2 large Eggs
  • 1.5 teaspoons Salt
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Vegetable oil

Directions

Step 1

In a small saucepan, heat the pineapple juice, whole milk, and unsalted butter over low heat until the butter is melted and the mixture reaches about 110°F. Remove from heat.

Step 2

In a large mixing bowl, combine 2 cups of the flour, instant yeast, granulated sugar, and salt. Mix well.

Step 3

Gradually add the warm pineapple mixture, followed by honey, vanilla extract, and eggs. Beat until combined.

Step 4

Add the remaining flour, 1/2 cup at a time, mixing after each addition, until a soft, slightly sticky dough forms. You may not need all the flour.

Step 5

Turn the dough out onto a floured surface and knead for about 5-7 minutes, until the dough is smooth and elastic.

Step 6

Lightly grease a large bowl with vegetable oil and place the dough inside, turning it to coat. Cover with plastic wrap or a damp towel and let rise in a warm place for 1-2 hours, or until doubled in size.

Step 7

Punch down the dough and divide it into 15 equal portions. Roll each portion into a ball and place them in a greased 9x13-inch baking dish, spacing them slightly apart.

Step 8

Cover the rolls with a damp towel and let them rise again for 30-45 minutes, or until puffy and nearly doubled in size.

Step 9

While the rolls are rising, preheat your oven to 350°F (175°C).

Step 10

Bake the rolls for 18-20 minutes, or until the tops are golden brown and the rolls sound hollow when tapped.

Step 11

Remove from the oven and brush the tops with additional melted butter, if desired.

Step 12

Allow the rolls to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.
