Ingredients

  • 4 medium-sized Fresh beets
  • 1 cup Pineapple chunks (fresh or canned, drained)
  • 0.25 cup Orange juice
  • 2 tablespoons Honey
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Cilantro (optional, for garnishing)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with aluminum foil or parchment paper.

Step 2

Wash and peel the beets. Cut them into bite-sized cubes, approximately 1-inch pieces, and place them in a large mixing bowl.

Step 3

Add the pineapple chunks to the bowl with the beets.

Step 4

In a small bowl, whisk together the orange juice, honey, olive oil, salt, and black pepper. Pour this mixture over the beets and pineapple, and toss until everything is evenly coated.

Step 5

Spread the coated beets and pineapple evenly on the prepared baking sheet. Make sure they are in a single layer to ensure even roasting.

Step 6

Roast in the preheated oven for 35-40 minutes, stirring halfway through, until the beets are tender and slightly caramelized, and the pineapple has a light golden edge.

Step 7

Remove the baking sheet from the oven and let the mixture cool for 5 minutes.

Step 8

Transfer the roasted beets and pineapple to a serving dish. Garnish with chopped cilantro (if using) before serving. Serve warm or at room temperature.
