Ingredients

  • 2 racks Baby back ribs
  • 1 cup Pineapple juice
  • 0.333 cup Soy sauce
  • 0.333 cup Brown sugar
  • 4 cloves Garlic
  • 1 tablespoon Fresh ginger
  • 2 tablespoons Honey
  • 2 tablespoons Rice vinegar
  • 2 tablespoons Hoisin sauce
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Vegetable oil
  • 2 stalks Green onions
  • 2 teaspoons Sesame seeds

Directions

Step 1

Preheat your oven to 275°F (135°C).

Step 2

Remove the silver skin from the back of the ribs using a knife or paper towel for better tenderness.

Step 3

In a mixing bowl, combine pineapple juice, soy sauce, brown sugar, minced garlic, grated ginger, honey, rice vinegar, hoisin sauce, salt, and black pepper. Stir until all ingredients are well blended to create a marinade.

Step 4

Place the ribs on a baking tray lined with aluminum foil. Divide the marinade, reserving 1/3 cup for basting, and pour the rest over the ribs. Massage the marinade into the ribs and cover tightly with foil. Let the ribs marinate at room temperature for 20 minutes, or refrigerate for up to 4 hours for stronger flavor.

Bake the ribs in the preheated oven for 2.5 hours, covered tightly with foil to retain moisture.

While the ribs are baking, heat a small saucepan over medium heat and add 1 tablespoon of vegetable oil. Pour the reserved marinade into the pan and simmer for 5 minutes, stirring frequently, until thickened to form a glaze.

After 2.5 hours, remove the ribs from the oven and discard the foil. Brush the ribs generously with the prepared glaze.

Increase the oven temperature to 400°F (200°C). Return the ribs to the oven and bake uncovered for an additional 20-30 minutes until the glaze is caramelized and bubbling.

Step 9

Remove from the oven and let the ribs rest for 5 minutes. Sprinkle with sliced green onions and sesame seeds before serving.
