Ingredients

  • 4 large Flour tortillas
  • 200 grams Deli ham, thinly sliced
  • 1 cup Pineapple chunks (fresh or canned, drained)
  • 2 cups Shredded mozzarella cheese
  • 0.5 medium Red onion, finely diced
  • 2 tablespoons Fresh cilantro, chopped (optional)
  • 1 tablespoon Olive oil
  • 0.25 cup BBQ sauce (for drizzling, optional)

Directions

Step 1

Preheat a large non-stick skillet or griddle over medium heat.

Step 2

Prepare the quesadilla filling by evenly mixing the pineapple chunks, shredded mozzarella cheese, diced red onion, and chopped cilantro (if using) in a mixing bowl.

Step 3

Place one tortilla on a clean, flat surface. Spread an even layer of the diced ham over half the tortilla, then sprinkle a generous portion of the pineapple-cheese mixture on top of the ham.

Step 4

Fold the tortilla in half to create a semicircle and gently press down to seal. Repeat with the remaining tortillas and filling.

Step 5

Add half the olive oil to the preheated skillet and swirl to coat the pan. Place one or two folded quesadillas in the skillet (depending on the size of the pan) and cook for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is fully melted.

Step 6

Transfer the cooked quesadillas to a cutting board and repeat with the remaining olive oil and quesadillas.

Step 7

Once all quesadillas are cooked, cut each semicircle into 3 wedges for easy serving.

Step 8

Drizzle with BBQ sauce if desired, and serve warm as a delightful appetizer or snack!
