Ingredients

  • 2 pounds raw peanuts (in the shell)
  • 16 cups water
  • 1 cup soy sauce
  • 1 tablespoon Hawaiian sea salt (or regular sea salt)
  • 3 pieces star anise
  • 4 cloves garlic cloves (peeled and smashed)
  • 2 tablespoons brown sugar
  • 0.5 teaspoon red chili flakes (optional)

Directions

Step 1

Rinse the raw peanuts thoroughly under cold water to remove any dirt and debris. Set them aside.

Step 2

In a large pot, combine the water, soy sauce, Hawaiian sea salt, star anise, garlic cloves, brown sugar, and red chili flakes (if using). Stir until the salt and sugar are dissolved.

Step 3

Add the raw peanuts to the pot and ensure they are fully submerged in the liquid. You can place a heat-safe plate on top to weigh them down if necessary.

Step 4

Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low and simmer the peanuts for 3 hours, stirring occasionally.

Step 5

After 3 hours, taste a peanut for desired tenderness and flavor. If needed, continue cooking and check every 30 minutes until the peanuts reach your preferred texture.

Step 6

Turn off the heat and allow the peanuts to sit in the pot for an additional 30 minutes to soak up more flavor.

Step 7

Drain the peanuts and serve warm or let them cool completely for later snacking. Store leftovers in an airtight container in the refrigerator for up to one week.
