Ingredients

  • 250 grams elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1.5 cups water
  • 120 grams cream cheese
  • 2 cups shredded cheddar cheese
  • 0.5 teaspoons garlic powder
  • 0.5 teaspoons onion powder
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.5 teaspoons paprika (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil over medium-high heat. Add the elbow macaroni and cook according to the package instructions, usually about 7-8 minutes, or until al dente. Then drain and set aside.

Step 2

In the same pot, melt the butter over medium heat. Once melted, add the flour and whisk constantly for 1-2 minutes to create a roux. The mixture should take on a light golden color.

Step 3

Gradually add the water to the roux, about 1/4 cup at a time, whisking continuously to ensure there are no lumps. After adding all the water, let the mixture simmer for 2-3 minutes until it thickens slightly.

Step 4

Reduce the heat to low. Add the cream cheese and whisk until fully melted and smooth.

Step 5

Stir in the shredded cheddar cheese a handful at a time, mixing until each addition is completely melted before adding more.

Step 6

Season the cheese sauce with garlic powder, onion powder, salt, and black pepper. Taste and adjust the seasoning as needed.

Step 7

Return the cooked macaroni to the pot with the cheese sauce. Stir until the pasta is evenly coated and heated through.

Step 8

Optional: Sprinkle paprika on top for a pop of color before serving.

Step 9

Serve immediately and enjoy your creamy, milk-free mac and cheese!
