Ingredients

  • 12 sheets Rice paper wrappers
  • 12 pieces Shrimp, cooked and peeled
  • 100 grams Rice vermicelli noodles
  • 6 leaves Lettuce leaves
  • 12 leaves Fresh mint leaves
  • 12 sprigs Fresh cilantro sprigs
  • 12 leaves Fresh Thai basil leaves
  • 1 medium Carrot, julienned
  • 1 medium Cucumber, julienned
  • 4 tablespoons Peanut butter
  • 2 tablespoons Hoisin sauce
  • 1 tablespoon Soy sauce
  • 3 tablespoons Water
  • 2 tablespoons Crushed peanuts

Directions

Step 1

Prepare the rice vermicelli noodles according to the package instructions. Drain and set aside.

Step 2

Slice the cooked shrimp in half lengthwise and set aside.

Step 3

Arrange all the filling ingredients (lettuce, herbs, shrimp, julienned vegetables, and noodles) on a clean workspace for easy assembly.

Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 5 seconds, then remove and place it on a clean, flat surface.
