Ingredients

  • 4 pieces Medium-sized potatoes (Yukon Gold or Russet)
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Parmesan cheese, grated (optional)
  • 1 tablespoon Fresh parsley, chopped (for garnish)

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Wash and scrub the potatoes thoroughly. Pat them dry with a clean kitchen towel.

Step 3

Place one potato on a cutting board. Using a sharp knife, make thin slices across the potato, about 1/8 inch apart, being careful not to cut all the way through. Tip: Place the potato between two wooden spoons or chopsticks to act as a guide and prevent cutting through. Repeat with the remaining potatoes.
