Ingredients

  • 4 cups Frozen hash browns
  • 4 cups Fresh spinach
  • 6 large Eggs
  • 1 cup Milk
  • 2 cups Shredded cheddar cheese
  • 0.5 cups Grated Parmesan cheese
  • 1 medium Yellow onion
  • 2 cloves Garlic cloves
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.25 teaspoons Crushed red pepper flakes (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with butter or cooking spray.

Step 2

In a large skillet, heat the olive oil over medium heat. Finely chop the onion and mince the garlic, then sauté them in the skillet until the onion is translucent, about 3-4 minutes.

Step 3

Add the fresh spinach to the skillet and cook until it is wilted, about 2-3 minutes. Remove the skillet from heat and set aside.

Step 4

In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, and red pepper flakes (if using).

Step 5

Stir in 1.5 cups of shredded cheddar cheese and the grated Parmesan cheese into the egg mixture.

Step 6

Melt the butter in a separate skillet over medium-high heat. Add the frozen hash browns and cook until lightly golden and crispy, about 5-7 minutes. Transfer the hash browns to the prepared baking dish, spreading them out evenly.

Step 7

Spread the cooked spinach and onion mixture over the hash browns in an even layer.

Step 8

Pour the egg and cheese mixture over the spinach and hash browns, ensuring it evenly coats the ingredients.

Step 9

Sprinkle the remaining 0.5 cup of shredded cheddar cheese on top.

Step 10

Bake in the preheated oven for 35-40 minutes, or until the casserole is set and the top is golden brown.

Step 11

Remove from the oven and let it cool slightly for 5 minutes before serving. Enjoy your Hash Browns and Spinach Casserole!
