Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 2 cups old-fashioned oats
  • 1 cup sweetened shredded coconut
  • 2 cups crispy rice cereal
  • 1 cup semi-sweet chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes using an electric mixer.

Step 3

Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

Step 4

In a separate mixing bowl, whisk together the flour, baking soda, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Step 6

Stir in the oats, coconut, and crispy rice cereal by hand using a spatula or wooden spoon. If using chocolate chips, fold them in last.

Step 7

Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The centers may look slightly underdone, but they will set as the cookies cool.

Step 9

Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to 5 days, or freeze for longer storage.
