  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Season the beef chuck roast with salt and black pepper on all sides.

Step 2

In a large Dutch oven or oven-safe pot, heat the olive oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side. Remove the roast and set aside.
