Ingredients

  • 150 grams Dark chocolate (70% cocoa)
  • 50 grams Unsalted butter
  • 2 large Eggs
  • 75 grams Brown sugar
  • 50 grams Unsweetened applesauce
  • 1 teaspoon Vanilla extract
  • 50 grams Whole wheat pastry flour
  • 30 grams Unsweetened cocoa powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground cloves
  • 1 pinch Salt
  • 30 grams Dark chocolate chips

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a square 8x8-inch baking pan with parchment paper, letting the edges hang over for easy removal.

Step 2

In a heatproof bowl, melt the dark chocolate (150g) and butter together over a double boiler or in the microwave in 20-second increments, stirring until smooth. Let it cool slightly.

Step 3

In a separate bowl, whisk the eggs and brown sugar together until light and fluffy, about 2 minutes. Add the applesauce and vanilla extract, and whisk until combined.

Step 4

Gradually pour the melted chocolate mixture into the egg mixture, stirring constantly to prevent the eggs from curdling.

Step 5

In another bowl, sift together the whole wheat pastry flour, cocoa powder, cinnamon, nutmeg, cloves, and a pinch of salt. Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.

Step 6

Fold in the dark chocolate chips (30g) to the batter for added texture and richness.

Step 7

Pour the batter into the prepared baking pan and spread it evenly using a spatula.

Step 8

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (be careful not to overbake).

Step 9

Let the brownies cool completely in the pan before lifting them out using the parchment paper. Slice into 12 pieces and serve.

Step 10

Enjoy your warm, spiced winter chocolate brownies with a guilt-free smile!
