Ingredients

  • 6 pieces celery stalks
  • 1 medium onion
  • 1 medium potato
  • 2 cloves garlic
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 4 cups vegetable or chicken broth
  • 0.5 cups heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley (optional for garnish)

Directions

Step 1

Wash and chop the celery stalks into small pieces.

Step 2

Peel and dice the onion, potato, and garlic cloves.

Step 3

In a large pot, melt the butter and olive oil together over medium heat.

Step 4

Add the onion and garlic to the pot and sauté until softened and fragrant, about 4-5 minutes.

Step 5

Stir in the celery and potato. Cook for another 5 minutes, stirring occasionally.

Step 6

Pour in the vegetable or chicken broth, bring to a boil, then reduce the heat to low and simmer for 20 minutes or until the potatoes and celery are tender.

Step 7

Using an immersion blender (or a countertop blender in batches), blend the soup until smooth and creamy.

Step 8

Return the soup to the pot (if using a countertop blender) and stir in the heavy cream. Heat gently without boiling.

Step 9

Season with salt and black pepper to taste.

Step 10

Serve hot, garnished with chopped fresh parsley, if desired.
