Ingredients

  • 1 cup wheat germ
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.75 cup unsalted butter
  • 0.75 cup brown sugar, packed
  • 0.25 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup rolled oats
  • 0.5 cup raisins or chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium bowl, whisk together the wheat germ, flour, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, use a hand mixer or stand mixer to cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

Step 4

Beat in the vanilla extract and egg, mixing until well combined.

Step 5

Slowly add the dry ingredients to the wet ingredients in batches, mixing just until incorporated. Do not overmix.

Step 6

Fold in the rolled oats using a spatula. If you're adding raisins or chocolate chips, gently fold them in at this stage.

Step 7

Drop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may still look slightly soft—this is fine as they will firm up while cooling.

Step 9

Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve and enjoy these slightly healthy, delicious cookies as a snack or dessert!
